SHRIMP TACOS with a KALE PEAR PURPLE CABBAGE SLAW

You may be off carbs, but that doesn't mean there's a wall banning you from Mexican food.

Love this colourful taco. I want to wear a dress inspired by this colour palette.

SHRIMP INGREDIENTS:
12-16 shrimp, peeled & deveined (plan for 3-4 per taco)
2-3 garlic cloves, diced finely
1 tbsp paprika
salt & pepper

SLAW INGREDIENTS:
5-6 dino Kale, thinly sliced
1 pear, diced
1 yellow pepper, diced
1/2 C red onion, diced
1/2 C cilantro, chopped
1 green onion, sliced
1 C purple cabbage, sliced thinly

VANILLA LIME VINAIGRETTE DRESSING
1/4 C apple cider vinegar
1 lime, juiced
1 tbsp vanilla agave
1/2 C canola oil
3 tbsp cilantro, chopped
1 garlic clove, chopped

SHRIMP INSTRUCTIONS:
1. Mix shrimp ingredients into a bowl.
2. Pan fry with olive oil until pink on each side - about a minute.

SLAW INSTRUCTIONS:
1. Mix the slaw ingredients with the dressing.
2. Add shrimp to a tortilla & top with dressed slaw. Or a Dukan tortilla.
